I'm joining the "smoothie craze". What can I say? I love smoothies and I hate veggies. In an attempt to get healthier this year, I've decided 5 fruit-veggie smoothies per week would be a great goal. I started with a standard spinach-strawberry-blueberry and now I've decided to branch out and try new things. In order to remember what I like and don't like, I've decided to post them here.
Since I'm always in a rush, I don't measure. Sorry, I'll try to approximate when I can. Also, my little ones always want to share my smoothies so I tend to make more than one person needs. Keep that in mind as you see my concoctions, use my ideas as a springboard for your own! My goal is to get more veggies into my daily diet and hopefully keep away the 30 pounds I've lost.
Forgive my lack of great pics. I don't really think about photographing for the blog until I'm ready to consume so I never seem to get that "ingredients" photo. I also suck at taking time to capture great photos, phone pics will just have to do for now.
Cucumber Strawberry Cherry Smoothie
- 1 large cucumber
- 5 strawberries
- 1 dozen frozen cherries
- 1 leaf of kale
- 1/4 cup plain yogurt
- Berry Flavored Stevia
Slice and dice the cucumber to remove seeds. I mostly peeled it, sliced in half lengthwise and then into 1/2 inch pieces, this made it easy to remove the seeds.
Toss the cucumber and Kale into the blender until mostly pureed.
Add Strawberries and Cherries and blend.
Optional: check the consistency and if it's too runny for your taste, add yogurt as a thickener. You might want to taste it now as well and decide if you want to add a little sweetener. I did 3 drops of Berry Stevia.
